Pumpkin Baked Oatmeal

Ingredients
  • 2 eggs, lightly beaten
  • 1 1/4 cups milk
  • 1/3 cup butter, melted
  • 1/2 cup brown sugar
  • 2 T. molasses
  • 1 tsp vanilla extract
  • 1 cup pureed pumpkin
  • 3 1/2 cups old-fashioned oats
  • 1 1/2 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/4 tsp. allspice
  • 1/4 tsp. nutmeg
  • 1/2 tsp. salt
  • 1/3 cup white chocolate morsels
  • 1/3 cup sliced almonds
  • 1/3 cup dried cranberries
Instructions
  1. Heat oven to 350.
  2. Beat together the eggs, milk, butter, brown sugar, molasses, vanilla, and pumpkin.
  3. Mix in the rest of the ingredients.
  4. Pour into a 9x9 glass baking dish and bake, uncovered, for 40 minutes.
Notes
Adjust sugar amount down and use more molasses to make it less sweet. Mix-ins are optional and flexible. Use your imagination! We topped ours with freshly whipped cream. You should, too.
